Ingredients

  • 2 tablespoon salted butter
  • 2 lbs carrots (peeled and sliced into 1-½ inch pieces, cut on the diagonal)
  • 1 tablespoon extra virgin olive oil
  • ⅛ teaspoon kosher salt and black pepper to taste
  • 2 teaspoons fresh thyme or 1 teaspoon dried thyme
  • 2 tablespoons honey
  • 2 tablespoons fresh parsley (finely chopped)
  • Zest of one lemon

Instructions

  1. Make sure the carrot pieces are of even thickness so they cook evenly.

  2. Melt the butter in a large deep skillet with a fitted lid or medium pot over medium heat. Add the carrots, olive oil, salt, pepper, and thyme and toss to coat.

  3. Cover and cook over medium to medium-low heat for 18 to 20 minutes, stirring occasionally, until the carrots are tender when pierced with a fork.

  4. Stir in the honey and cook uncovered for 2 to 3 minutes, tossing until the carrots are lightly glazed.

  5. Remove from heat and stir in the parsley and lemon zest. Serve warm.
